BBQ Chicken Cauliflower Crust Pizza: Clean Eating Kitchen with Jan D’Atri



If you’re a pizza lover, you don’t have to give it up while dieting. Our BBQ Chicken Cauliflower Crust Pizza, has all the good ingredients, and none of the guilt.


BBQ Chicken Cauliflower Crust

Ingredients:

  • 2 cups of cauliflower (riced)
  • 2 egg whites
  • ½ tsp. garlic powder
  • ½ tsp of chopped or dried basil
  • ½ tsp of oregano
  • Pinch of salt and pepper
  • Walden Farms® bbq sauce
  • 3 oz. of skinless chicken breasts (cubed)
  • Zero-calorier cooking spra

Directions:

It only takes a few ingredients to make a sensational, Cauliflower Pizza Crust, and it makes delicious individual pizzas for a meal, or mini pizzas for snacking. First, the cauliflower, it has to be riced – that’s become a whole lot easier, because you can now buy riced cauliflower in-stores. Or, you can take cauliflower chunks and rice them in your food processor or mini prep. Make sure not to over pulse, you don’t want the cauliflower to be mushy. Make two cups. Once the cauliflower is riced, it goes into the microwave for about 7-8 minutes to steam and soften. And that’s where the cheese cloth or kitchen towel comes in. You’ll take the steamed rice, spoon it into the cheesecloth, or towel, and fold up, twist, and squeeze all of the liquid out of the cauliflower. Now this step is really important, because if the dough is soggy, the pizza crust won’t hold up. Now let’s make the dough!

In a bowl, add the two cups of steamed and drained cauliflower, two egg whites for binding of the dough, a half a teaspoon of garlic powder, a half a teaspoon of chopped or dried basil, a half a teaspoon of oregano, and a pinch of salt and pepper. Mix the ingredients to combine, then on a pan sprayed with zero-calorie cooking spray, start forming a 9-inch pizza crust. You don’t want it too thin, it should be about a quarter of an inch thick. Place the pizza crust in a pre-heated 450 degree oven, and bake for 15 minutes or until golden brown. It’s ready for the toppings!

Cube three ounces of skinless chicken breast, and season with salt and pepper. Grill for a few minutes or until done. Grab a bottle of calorie-free Walden Farms® bbq sauce and the cooked chicken, and build your pizza. Spread some bbq sauce over the cauliflower crust, leaving a slight border; do the same with the mini pizzas. Then, spread the cooked chicken over top. It goes back into the oven under the broiler element for 1-2 minutes. If you want to add healthy greens, baby arugula tastes fantastic with it. All that’s left to do, is devour your homemade and healthful, BBQ Chicken Cauliflower Crust Pizza!
